Caramelized Onion and Chive Yogurt Dip

I still remember my first-ever potluck contribution, back when I was a very new cook: onion dip.  The classic recipe, where you mix one packet of onion soup mix with a tub of sour cream and serve it with a bag of potato chips.  Looking back, it seems somewhat basic. But my classmates were impressed that I had actually made something--they all brought packaged cookies.

My cooking skills have improved dramatically since then, and so have my potluck contributions (for example: Deviled Eggs with Yogurt and Dill, Meringue Chocolate Chip Cookie Bars, Apple Bars).  But I still have a soft spot for onion dip, so I took up Stonyfield Organic and Simply Organic on the opportunity to develop a lighter, more flavorful version of the classic favorite.

Caramelized Onion and Chive Yogurt Dip

This recipe uses Stonyfield's new Double Cream Yogurt, a thick, whole milk yogurt with added cream.  Double Cream is designed to be used for cooking and baking, and it makes a wonderful lower-calorie substitute for sour cream, butter, and vegetable oil.  It has a rich, silky texture and a milder flavor than Greek yogurt.  If you can't track down Stonyfield Double Cream, you can use Greek yogurt or sour cream in this recipe for a slightly tangier dip.

One of my other ingredients is Simply Organic Onion & Chive Dip Mix, an offering from Simply Organic's full line of spices, seasonings, and mixes.  If you want to keep things easy, you can simply stir the dip mix into 2 cups of sour cream or yogurt.  If you want to take things up a notch, I've added caramelized onions and fresh chives in my recipe below.  When caramelizing onions, I've found that I get the best flavor from yellow onions.  But the most important trick when caramelizing onions is to be patient; it should take 35 to 40 minutes.  You'll be rewarded with a richly flavored dip that's perfect for potlucks--if you can resist eating the whole batch yourself.

Ingredients:

  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, halved and thinly sliced (about 1 1/2 cups)
  • 2 cups Stonyfield Organic Plain Double Cream Yogurt
  • (1 ounce) packet Simply Organic Onion & Chive Dip Mix
  • 1 tablespoon chopped chives
  • fresh vegetables or chips, for serving

Melt butter in a medium saucepan over medium-low heat.  Add onions, cover, and cook, stirring occasionally, until onions are dark brown, about 35-40 minutes.  Remove onions from heat and allow to cool completely.

In a medium bowl, mix the yogurt and the dip mix.  Fold in the prepared onions.

Cover dip and chill for at least 30 minutes.  Garnish with chives before serving with fresh vegetables or chips.
