It's one of the indisputable facts of summer: hot days call for cool treats.  While I love indulging at my favorite ice cream shops, I try to eat healthier treats at home.  Last year, I developed a recipe for a frozen yogurt-style dessert made with bananas; this year, I teamed up with Barlean's and Zoku to make frozen pops!

Barlean's sent me two of their greens powders to experiment with for my frozen pop recipe, Chocolate Silk Greens and Superfruit Greens.  Both are a convenient way to get an extra boost of fruits and vegetables, plus they're vegan and made without GMOs, gluten, and soy.  I especially appreciate that Barlean's sweetens their greens with stevia instead of added sugars.  The Chocolate Silk Greens are made with fair-trade cocoa, and the Superfruit Greens have a delicious strawberry-kiwi flavor.  I've previously used Chocolate Silk Greens in my Chocolate Banana Ice recipe, and I also like stirring it into plain yogurt for some added flavor without added sugar.  Mike is a huge fan of the Superfruit Greens and uses it to make healthy homemade slushies.

After lots of taste testing, my favorite pop recipe was a mixture of the Chocolate Silk Greens, bananas, cinnamon, and peanut powder.  Despite the creamy texture, the pops are vegan since I used soy milk (you could use dairy or nut milk if you prefer).  I love adding peanut powder to frozen treats and oatmeal because it has all the taste and protein of peanut butter with much less fat; I used Jiff Peanut Powder for this recipe, and another good option is PB2 Powdered Peanut Butter. 

Chocolate Banana Peanut Pop with Zoku Mold and Barlean's Chocolate Silk Greens

I used Zoku's Mod Pops mold to make my pops.  It makes six pops that are 3.2 ounces each, and the compact design fits perfectly into my freezer door.  I liked that the set includes drip guards to keep your hands clean.  The only downside is that the set is hand wash only.  Be sure to let the pops freeze for the full eight hours—I tried eating my first batch after seven hours and they weren't quite solid yet.

Chocolate Banana Peanut Pop Ingredients

Ingredients:

  • 1 1/2 cups soy milk
  • 1 1/2 cups sliced bananas (about 3 small bananas)
  • 3 scoops Barlean's Chocolate Silk Greens
  • 3 tablespoons peanut powder/powdered peanut butter
  • 1 1/2 teaspoons cinnamon

Add ingredients to blender and blend until smooth.  Pour into pop mold and freeze until solid, at least 8 hours.

To remove pops from molds, hold under hot water for 30-60 seconds.
